    Engine bolts

I made the rookie mistake of not properly record the positions of the bolts of the engine header.

I also don't have the bolts for the crankcase bolts (or at least I cannot map them to the box of bolts that came with the bike)
Is there a source of information for that?

Many of the bolts have the length coded into their part number. For example, a header bolt for an 850 01500-0835B

This bolt is 8mm x 35mm long. Black colored.

Honestly, though, you don't need this info. Just find a bolt that's the proper length for the application and go.

Suzuki bolts graded 4, or no mark, are the softest, and should only be used for low stress applications. Most other bolts have a 7, which is medium strong. Some bolts have a 9, such as those for the camshaft caps, and they are the strongest of all. For header bolts, a 7 bolt is appropriate.

Any old parts look up will have the bolts listed and Nessism is correct. However, depending on the cover ( example - GS750 sprocket cover ) has 3 different length bolts in specific locations. Suzuki Parts House or Babbits have detailed parts breakdowns.
      Current:
      1993 ZX11 - 2nd build in progress
      1977 GS750 (710 is getting closer)
      1998 Kawasaki Voyager - selling
      1998 Chevy C2500
      1999 Rav4

I have seen the diagram, but it only shows 2 bolts:
Shop online for OEM Cylinder Head Cover parts that fit your 1979 Suzuki GS1000S, search all our OEM Parts or call at (231)737-4542

how do I extrapolate it to all the others?

Look at the quantities. Cover uses 6 long ones and 10 shorter. Look at the cover itself to pick which goes where. Pretty simple stuff.

Just place the bolts in the holes. The ones that drop in too far don't belong there, and the ones that stick up to far don't belong there. they should all stick out the same amount, or pretty darn close to it.

Like Ed said : look at the OEM numbers.

              Bolt number 9 is 01550-06407.
Look at the second part of that number : 06407
              The first 2 digits, 06, means 6mm or M6.
              The second 2 digits, 40, mean 40mm.

I can't tell (exactly) which bolts you need, but I've had good luck buying bolt sets on ebay. Some people sell full sets from used scrapped engines, but there are also stainless-steel allen-head bolt sets. E.g. https://www.ebay.com/itm/371060662034
