    top end oil supply

1979 GS750E. It appears the only oil supply for the top end is what gets thrown off the cam chain. Is that correct?

Nah there should be oil paths running up threw the heads, that supplys oil up top.
That's why you have an oil pressure light, and theres a chrome bolt on the Riders Right of the engine that is an oil pressure check hole.(when the bolt is removed)

1979 8 valve. No chrome bolt on side of head and no holes thru the head gasket other than stud holes and bores.

They are usually on the outside corners and have sealing o-rings to prevent leaks.

The new design multi layer steel gasket has no orings incorporated in it. That's what got me wondering in the first place.

That is for the head gasket. Look at the base gasket.

Oil comes up around the two outer, rearmost, studs. If the head is off you really should pull the cylinder and replace the base gasket and the sealing O-rings. There is a very good chance you will get a leak if you skip this critical step.
