Carb Jet Specs/What jets and heights to use

I've got a 1979 GS425. I did a cafe job to it and I'm wondering what kind of suggestions you guys have for jetting.

The intake has been changed from the stock air box to two uni-foam filters.
The exhaust is stock but the bike was missing the H pipe that connects the two pipes beneath the engine.

Right now I've got a stock pilot, 117.5 main, and the needle is set at the stock middle height. The bike pulls real well up top. 5k and up its very strong.

The mid range is not quite as strong or torquey as up top. I changed the needle to one notch down(richer) and it felt even boggier so i moved it back to the middle position.

Low RPM range is strong and torquey just like the top end. Instant hard power.

I've been contemplating stepping the main down to a 115 and possibly setting the clip on the needle jet higher to lean it out a bit although it seems like it should be richer to compensate for the intake and exhaust modifications.

Any suggestions or critique is welcome.
