What is the easiest way to remove the cables that are attached to the carbs?

The easiest way would be to remove the carbs from the engine and airbox first.Pull the carbs to one side ( usually the right side) and you get unrestricted access to the linkage.
If you leave the carbs inplace you can still get to the linkage and cable but it is a lot more fiddly. Sometimes taking off the seat and gas tank give more room to get your fingers in. It may also help to use a long shaft screw driver and needle nose type pliers to reach things. Loosen off the nuts that keep the cables connected to the brackets attached to the carbs. Pull the cables free of the brackets. Pulling up on the throttle cable will turn the cam in the linkage that it is connected too into a position where you can push the "barrel" ( at the end of the cable) free and the cable is then disconnected.
It may seem like a lot to pull off the carbs first but with practice its not hard and by far the simplest way of doing it IMHO.
