I know both 1980's gs650 and gs850 carbs are Mikuni BS (CV) series. According to this rebuild tutorial (http://www.mtsac.edu/~cliff/storage/...d_Tutorial.pdf) they are both 32mm. Does that mean they are interchangeable?

Yes and no.
Yes, they are the same basic bodies, but the length of the throttle shafts for carbs 2 and 3 are different, as well as the fuel "T" between 2 and 3, and also the length of the "choke" rod.
Also note that the "choke" activation method changed for the '82 model year, so if are changing years, that that into consideration, too.
