Anyone have any experience with partially blocking air filters until the bike can be rejetted?

Yes, there have been reports, but it's going to be a guessing game. How lucky do you feel?
You can damage the pistons LONG before the oil ever warms up. Again, how lucky do you feel?
You really think it's going to take you more than three months or so before you can get some jets for your carbs?
That's about how long the snow and crud will last in your area.

It would have to be a gentle ride - it's missing (or something) badly above 4,000 rpm.
I was under the impression that the choke only has an effect on a closed throttle, though riding it there with a little choke does sound good to me.
My fingers were so cold today that I forgot to look at the oil temp gauge, though I don't think it climbed much at all (it was in the mid 20's).

At one point on my XS650 Street Tracker project (years ago) I ran Emgo cones which offer no air restriction or filtering whatsoever. The bike ran super lean was balky and backfiring at times. My pro mechanic friend at that time suggest wrapping at least 3/4 of their surfaces with tape until we could put in fatter jets. I did do that and it did alleviate about 70% of the issues but it was not a solution.
A bit later, after going up a couple of steps in the mains it ran better but didn't get properly sorted until I installed all foam UniFilters. With those on , I had to come down one stage in the mains and from then on it was happy.
As mentioned, going with pods and rejetting is a project in itself and its important to have good quality pods to work with. I hear Apes are good as are K&N and the aforementioned Unis but anything else I wonder about. I think with those Apes, once you sort out the jets you will be fine. Having a pro tuner will save you lots of headaches but it will be costly I'm betting.
Do it yourself and learn something new.

If I had a Dynojet, maybe. I did look into getting one, but then there's the whole mess with the Mrs.:

No offense, Cowboy, this ain't Texas. I don't own any pickup trucks, or even a vehicle with a trailer hitch!
What caught me by surprise is the experience I have with the only other big four I've ever owned - a '73 Kawasaki Z1. I bought it with a 4-into-1 and it ran fine. I removed the pipes baffle, and it ran fine (but loud). I removed the stock airbox and installed K&Ns, and it ran fine. Never had the jetting changed while I owned it.
On the other hand, in a way I'm glad going APE did make such a big difference. To me, that means there's untapped potential that only requires jetting to attain.
I'm still somewhat concerned by someone's inference that even with proper jetting (and the increase in top end), my low and mid range will never be the same.
