One a scale of 1 to 10, I put doing carbs at about a 5. Doing valves, for me, is about a 7.
I'm not a mechanic but have done almost all the work on my bike myself. Of course, it can be really frustrating sometimes.
If you do a carb cleaning search, you'll find a ton of info on cleaning them specific to your bike. You don't need any exotic tools.

are the plugs oily? black? or wet? if there oily it might nee rings, or new pistons, can you do a compression check with or without the carbs on it doesnt matter
i would go with the new exhaust, and try it out , and re calibrate the carbs then

The ignition is helpful but it won't solve your problem. You need to go through the carbs. George is not known for his amazing work..

While a carb cleaning may be in order, I think you guys have missed the essential item here-WG set the carbs up for pods and a 4-1, Geronimo went to stock exhaust instead.
This requires rejetting the carbs as it's now too rich. What jet sizes were put in? If you don't know take the carbs off, pull out a jet and see what size it is1978 GS 1000 (since new)
