I'm heading out for a +2 week North Country tour next week. I'm wondering if it's a good idea to change the spark plugs before the trip, or if I should just bring an extra plug with me. What would you do?

Just bring spares...if needed them fine. If not then youll have them for the next time you do decide to swap them They dont take up any space to have along. Notice i used SPARES as in more than one!!MY BIKES..1977 GS 750 B, 1978 GS 1000 C (X2)

replace them before you go, keep a spare set with you, the old ones after cleaning them. dont forget to pack a plug wrench too!1978 GS1085.

Depending on room in your pack..or saddle bags..I have seen guys take one of those emergency gas jugs that you get at an auto parts store along. Its a ealed container that you can store in the trunk just in case. If you get into an area that far and few between stations it may just come in handy. Its not fun running on reserve with no gas station in sight.
