Also: carb O-rings, what is the site for them again? I figure I might as well change them while I've got the carbs off.

This is the site for the carb O rings:
See a dealer if you want the O rings that go on the intake manifold boots.

Hey buddy. Guess what I drive? (yes the 1980 one is my main squeeze right now) As for gettnig the carbs in and out with the airbox in place. Good luck. It would take me 30-90 minutes each time to get the carbs in and out. That's a fact of life with the 550's
Now you are airboxless... First... 120 or 122.5 main jets are a good start. if I had my way I'd also raise my needles a notch, but that's not possiable on my carbs. (And ordering needles is next to imposable) The 92.5 (stock) jets WILL NOT WORK without the airbox.
And you may run into problems at WOT. Becuase the 550's were small motors and they wanted to make maximum horsepower they came with the lightest slide springs of any GS with the BS32SS carbs. These light springs cause VERY low intake vacuum. while this is good for horsepower it's also bad for the petcock. Which is vacuum operated. more than 45 secconds or a minute and the fuel flow will shut off for long enough to kill the motor. (at least that's been my experience)
I assume you're going with EMGO pods?
It would apper you're trying to "re do" all the effort I've put into my bike. ;-) It's best not to duplicate work yaknow. You'd have to be crazy to be sane in this world -Nero
If you love it, let it go. If it comes back....... You probably highsided.
1980 GS550E (I swear it's a 550...)
1982 GS650E (really, it's a 650)
1983 GS550ES (42mpg again)
1996 Yamaha WR250 (No, it's not a 4 stroke.)
1971 Yamaha LT2 (9 horsepower of FURY.)

Oh yeah. installing carbs. Get some sillicone spray. spray it on the carb flanges and when you're installing the carbs, do NOT try to just push them in. You need to wiggle the carbs. Top edge or bottom edge on one side will enter first, keep wiggling them up and down, andthe other side will eventually wiggle in too.
The trick, is wiggling. just pushing and you'll tear the boots. You'd have to be crazy to be sane in this world -Nero

i just rub a little petroleum jelly on the inside of each boot. Carbs go in much easier. they have a ridge so its easier to push them in at a slight angle until you clear part of the ridge.\Don't know the 850 but on my GS1000 and KZ1000 it seems to be much easier to get a decent force applied if bike is on center stand and I'm sitting on the frame.

Your local motorcycle shop will have the proper jets for you. For about $3 each. Bikebandit sells them in sets of two for 8. So does dennis kirk.
If your local motorcycle shop looks at you funny. Ask for "large round mikuni" jets. You'd have to be crazy to be sane in this world -Nero
