Lay it down until it shines with a little orange peel, then stop. It will flow a little before it flashes off. You're better off with a little peel, than runs. I used 3 coats that were thinned very little. You can always color sand and buff provided you get 2-3 good coats.

I have the same bike and color. Been working on it for a few years putting it back to stock. Just bought a NOS tank for it hope comes out half as nice as yours.
