Just bought a 1984 gs750ef and need to replace fork seals.It has the antidive gubbins on it.How much oil and what type do I need and is there anything to look out for?

the anti-dive doesn't change the amount of fork oil it uses... just brake fluid.
as for the oil weight how much do you weigh and how does the suspension feel on compression and rebound? -
