They should, I got a front one into a 79550 using the 79 axle and spacers.
On my 83 I did not try it since I had bought the complete frontend.
What you may need to look at on the front.
Use the speedo drive that goes with the new wheel.
Start with the axle and spacers from your bike.
The question will be in the spacing of the discs.
Rear,
I swapped engines so my chainline is wider.
Beyond that, hopefully someone else can answer for you since I have not gone there yet. I myself do not have the right mix of parts yet and the rear rims I have here are 3.5" wide, not worth the effort.

You'll have massive problems with disc alignment. Which, in my mind, is a bigger part of the point of swapping the whole suspension out. I dunno why you'd want the Kat wheels without the upgraded forks. Seems pretty counterproductive to me. The wheels arent THAT much wider, but the suspension is THAT much better. You're not going to get any more "stick" out of the Kat wheels than over stock if you've got sloppy suspension bits holding them. Just my .02
