Colourtune then Carbtune? or vice versa?
Here's a quickie question: just cleaned and rebuilt my carbs, now ready to try out these new toys. Which one do I do first? sorry if this is a pretty rookie question

you got it right...
Adjust using the colortune, then sync, then check the mixture again, then check the sync again.

Just a note: If you plan on playing for long, tuning mix and sync, keep a fan (or two) going over the head/front of the motor to keep the bike from overheating. Less likely to do it this time of year, since, at least around here, temps are still in the mid to low 50s most days, but just a precautionary measure at least.

Ya, I bouced back and forth between the 2 when I set up my carbs after the pods and jet kit. By the 3rd time everything was exactly right and nothing changed.

Don't forget to pull your plugs and check for the correct color, carb tune is great i used it, but the plug color tells the real story to confirm how close the colortune gets you.
Adjust your screws to the correct amount of turns out just to get it to start.
Vac sync first then adjust your scres for proper mix otherwise it will start rougher and run rougher until you get the correct amount of air balanced .
Then adjust your screws again as has been said.

Colourtune gets you in the ballpark. I was still lean and had to richen out the idle.1983 GS 1100E w/ 1230 kit, .340 lift Web Cams, Ape heavy duty valve springs, 83 1100 head with 1.5mm oversized SS intake valves, 1150 crank, Vance and Hines 1150 SuperHub, Star Racing high volume oil pump gears, 36mm carebs Dynojet stage 3 jet kit, Posplayr's SSPB, Progressive rear shocks and fork springs, Dyna 2000, Dynatek green coils and Vance & Hines 4-1 exhaust.
1985 GS1150ES stock with 85 Red E bodywork.
