You could retap and go with a size smaller nut

Best size to use assuming you are starting with a 10mm X 1mm thread is a 3/8-24 fine about 9.5mm and should go on without having to grind down the stud. Also you can find acorn nuts in stainless for this size much easier than for metric fine threads.
Nuts areavailable at McMaster Carr part #91855A331

It should originally have been an M10x1.25 thread, not an M10x1.0.

The way I fixed it on my bike, was that I cut a new thread on the stud with an M8x1.25 die.

Then I wound an M8x1.25 helicoil over the outside, using red Loctite so that it would stay put.

Thus the outer diameter of the 'new' thread was then 10mm -- or very close!

Which meant I could use the original acorn nuts.
