how often do you do oil changes, check the fluids, just normal maintanance stuff?

Every 2,000 miles for the oil and fluids, every other year.

What bike? Chain or shaft? The maintenance schedule should be in your owner's manual or service manual. There may be one for your bike on my website.

Engine oil, every 2000 miles (or less). For shaftys, the final drive unit gear oil gets changed every 7500 miles, same with the secondary gear oil (if applicable). Chains get lubed every 600 miles, I think. Valves get adjusted every 4000 miles. Brake fluid and fork oil get replaced every two years. I'd have to check the manual for greasing swingarm and steering head bearings.
