The book says yes, but bear in mind you should check renew the valve guides and remachine the valve seat before lapping the valves.
MAKE SURE to clean ALL lapping compound up. -
Valve Lapping Condition
The answer to your question is not a simple yes or no. Yes you can lap the valves on a 79 GS, the question is does it need this? If you believe the valves to be worn due to poor engine running, low compression, etc.... Than go ahead, I have taken a GS apart, lapped the valves and put it all back together in a day. However if you have no problems I would not do this, you open yourself up to not seathing the head gasket right, or not timing your cams right, or a million other things. Unless you are bored and have lots of free time I would not lap the valves unless you need to. If you want to know how to lap the valves just ask and I will attempt to right a brief description.Comment

Just for anybody with an E bike who's reading this, the 81-82 1100/1000E factory manual says to use Prussian Blue to check the seating face but not to use lapping compound.

Paul: The manual says to use your 15,45, and 60 cutters to get things right. For some reason it says not to use the lapping compound for the FINAL cut...I don't understand that part exactly. I've only rebuilt a handful of motors 8 years ago so I can't say I've got enough experience to question the manual.
