Try a friendly local upholstery shop. When I bought my GK four years ago, I took the seat to a local shop that did a nice job re-covering it. They charged me about $70 to have it done. I was pleased.
Unfortunately, a year later the foam quit supporting my weight and I was sitting on the pan itself. That's when I decided to have the seat customized by Diamond Custom Seats, at http://www.diamondseats.com/diamondseats.html .

That seat cost me $349 plus $20 shipping. In addition, I had to pay UPS to ship the seat to Diamond in Seville, Florida. The date was January, 2001, a little over 3 years ago, so it may be more $ at this time.
It was worth it. You can see pictures of my seat in the thread by Planecrazy, "1100GK seat ... will it work on a GS1100G?"
Mine is a "HiMiler" with optional velour top, which I recommend over naugahyde. Three years and 39,000 miles later, it's holding up quite well, both functionally and cosmetically.
The pan must be in good shape, with little or no surface rust, or they won't accept it.
