Is it possible to switch rear drum brakes to disc brakes on an 83 GS750T? If so how difficult would it be?

If you have the parts anything is possible, You would need to change the
swingarm, the wheel, the brake peddle, and need to add all of the brake hardware. If it was the front I would do it no Question. For the rear ??
Do you have dual disks on the front?? That is where the upgrade should be made -
you would need a disc brake rear wheel,
the disc
the calaper
wheel spacers
swing arm from a disc brake bike (750L)
torque arm
brake lever pivot shaft
master cylinder
master cyclinder reservoir
and brake line to calaper
and this is assuming the mounting lugs for the master cylinder are present on your frame, if not you will have to install them, also the brake light switch may need to be relocated.Comment

Given that the rear brake contributes only about 30% of the total braking power, I question whether it would be worth the trouble & expense. If you can easily lock up the rear wheel with the current drum brake, a disk won't do much more for you unless you're into heavy, heavy brake use. In that case, a disk brake won't fade as quickly.Comment
