How-dee and welcome.
If you look at the top of the page, there is a search option, and if you use it and specify 'search for all terms' on 'oil cooler', several discussions on this subject will come up. Maybe more than you ever wanted to know about Gss and oil coolers. Katman has some good info, and his I.C.B.M. saga is great reading in any case.
My personal experience is that the oil cooler doesn;t make so much difference for cruising or everyday riding, however a big difference if you are working the engine hard, as on a track or extended hard running two up. I have trouble finding roads where I can run that hard... maybe Montana. Note that I live up north where ambient air temps are cool, maybe not a good test.
Opening up the stock exhaust with a free flowing aftermarket makes more temp difference than you would think.

On my 1100 a cooler dropped the oil temp by at least 20 degrees. If you're going to be putting on pods you'll need to re-jet for sure.

Call Dynojet themselves. You can find the number online. They may sell to you directly if you give them a sob story. You might catch one on Ebay. Watch the Ebay listings under Yoshimura too. I've seen kits for GS models there off and on over the last couple of months.

You'll lose a bit of bottom end but with an 1100 you're not going to miss it much. It will be more responsive and rip on top once you get the jetting spot on. The Dynojet settings will get you very close.
