kit to do this
SuzukiRay told me recently that he has produced a kit to mount oil cooled (GSXR, Bandit, and some bikes Suzuki called 'Katana') heads on air cooled engines. I would say that you need to have a drag racers' attitude (Blew it up? oh well,That's Racing!) and experimental rocket scientist's willingness to fiddle if you choose this route.
The oil cooled heads have much better ports and larger valves than the GS series, and are generally thought to flow better, stock, than one can get spending lots of $ modifying a GS head. Down side of this is that they have lots less metal in, and are designed to have the high volume oil flow of the GSXR series engine over the cams and chamber area. To duplicate this on a GS bottom end requires figuring out how to get more oil flow, and I don't mean the 30% more you get with GS750 gears.
Plenty people have done it without adding an aux oil pump, and I intend to do so myself this winter, just saying....
I have the advantage of northern latitude, so my ambient temps tend to be below 80F and I never, ever sit in traffic. I would stick with a GS head if I lived or rode in a big city and often got the thing really hot by moving slow.
OH yeah, - No I do not wish to argue over 'REAL' Katana. One might just as well posit that "Real" Katanas have a two edged blade and once drawn cannot be put away until blooded. So messy...
I notice the brits tend to lump all the GSXR type engines together as 'oil boilers', maybe that works.

Is this a Katana?
Or is this a Katana?
OH! I have got it!! THIS is a Katana, right?
I'm so confused... might this be a Katana?

I call the GSXR type engines "SACS motors". That seems to get it, and plus it lets you laugh at noobs who ask, "sacks? what's that mean?"

Hi
I've done some looking into the camshaft swap.
91 and up won't work. They are eight lobe cams, which I'm assuming means that's when they went to water cooling...
Anywho...
Just doing the cams is supposed to give you a pretty good bump, throw in having someone port the heads for you, or just some polishing, and you'd probably come close to what you'd get with the whole swap, only much cheaper.
(You can find the cams reaaalll cheap on e-bay or putting a 'want' out on craigslist)
I bought a set of cams from a guy that said he thought they were 1990s, but they are definitely 1991,1992. I got them cheap enough that I can make a few bucks selling them to someone else..... but I want to get this swap done!
