I plan on buying a set of RS36 or 34's, I'm sure the jets are going to have to be changed, do they make a jet kit or do i have to buy them individually from thier website, if i do this how do i know which size to get

If you're buying a new set they usually come with the installed set and two other sets of mains. The needles are the adjustable type. If you have 1000cc or bigger go with the 36mm carbs. 750's use the 34mm carbs. The supplied mains will probably do just fine. You'd be surprised how flexible the jetting is straight out of the box with a wide variety of engine mods.
