    GS750 8V - VM29+small port 750 head -vs- CR31 + GS850 CV big port head?

So I'm building up another engine over the winter, and was hoping for some feedback.

I have some 9:1 870cc pistons and 850 cylinders. I have some big port CV-carb GS850 heads. I no longer have any good spare 79 750/850 small port heads, so I'd have to track down a good used one.

I have one set of VM29 smoothbores and 2 sets of Keihin CR31 smoothbores. One will be going on a GS1000-1105/1120/1135cc build I'm planning.
I could use the VM29 smoothbores on a 740cc GS550/650 hybrid build. I could also potentially trade the spare set of CR31 smoothbores for a set of VM29 smoothbores.

Now, given what parts I currently have vs what I'd have to trade for or buy, would it be a very fulfilling investment to send Ray my GS850 big port head for a valve job and street porting and run CR31 smoothbore carbs? Or am I much better off for a street/canyon carver/mountain twisties hot rod to run the smaller port head and VM29's?
I plan to maybe run the MegaCycle .354" lift camshafts, nothing bigger unless I go 894cc/920cc/944cc custom JE or Carillo Pistons, which I still may do if Ray talks me into this.

big port cv head + 870cc + CR31's too big for a fun responsive street bike?

Street ported small port VM head + 870cc + VM29 better bet? I'd have to trade carbs and find another good 79 750/850 head (hard to find 79's vs 77-78 750-only, 79 had extra bolt hole at front to fix oil seepage at cam tunnel, as did all 80+ CV heads)

    Thanks,
