new bikes like occ bikes or like new sport bikes, i am pretty sure the swing arm will handle a real wide tire but the oem rim, chain and brake arm will need to be moved out to clear the tire. look at some of racing jakes posts, he is running a stock 1100 swing with a 7"? drag tire on the back, or look at katmans posts he is using a heavilly modified bandit 1200 swing.

GS1100 swingarm will fit a 180 tire on a 5 or 5,5 inch rim, brake anchor will need to be moved out and chain too, switched to 530.

just so we are all clear.....
the gs1100 swing arm is one of the widest arms out there. wider than the gsxr swings of the early 90's which all came with 5.5's and 180's.

extended arms deminish cournering. Why do you want to extend the arm for the street? Unless it is just the kool factor.
