If I could throw my two cents in; since you have a GS850 one of the best touring bikes ever made maybe try to look at the project from it’s basic original form, a touring bike with a great motor, and integrate that into your cafe concept.
I started off with a GS750 that was much more unoriginal than your bike and would be a great cafe candidate, but over time I was drawn to the original design of the bike after staring at it for hours, and really appreciating the engineer’s design and humbling admitting from a visual aspect I probably can’t do much better. A lot of guys I know who have done cafe projects is first take the turn signals off, I very affordably bought some originals and think they look better than any small hidden turn signals. There’s a guy in our garage who has a beautiful 81’ CB750 cafe but the tiny turn signals look unporportional.

I've kept all the old parts. If there's anything that I don't like I can still put it back on (except the seat). I know it is a beautiful bike but I wanted to create something new. And if anyone is looking to restore one and needs some parts, feel free to make an offer, I'll add a picture of everything I have left over when I'm done.
But here's what I've gotten done:
Tank being painted, the color really changes after the clear coat (done some samples)
Rear hoop all welded on, will paint it later

Click on the opposing arrows to expand the picture (top of screen) then click the crooked arrow to share it (bottom). A box will show up with options how to share. Got it home yesterday, the roads were finally clear enough of snow.
