Motorcycle tire sizing
I know that on cars, you can fudge the size a little without hurting anything, but how set in stone are the size tires that a bike needs to be safe? with respect to width and aspect ratioTags: None

Depends on the bike. A shaft GS bike has only so much room for a rear tire. A typical 130 90 16 (or 17, depending on the rim diameter), is the widest that can safely be installed. A 140 90 16 may rub the swingarm. I wouldn't deviate from a 130 90 rear tire on a big shaft GS bike. Maybe the chain GS bikes may give more flexibility in this area, but I don't know for sure.
On the front one can use a 100 90 19 or 110 90 19, and either one will fit and be safe. I can only speak for the 850, 1000, and 1100 G bikes.

90/90 and 100/90
for the front, going from a 90/90-19 to 100/100-19 worked fine for me. 100 and 110 widths are a lot easier to find these days.
