    Bolt thread

It's been a while since I remember somebody commenting on how you do it, but I remember when I was asking for a diameter and thread pattern of a bolt and they were able to tell me what it was off of the seed number alone.

Well I have another bolt I need to know but I'd like to remember this rule so I can do it myself next time.

    The seeded # is 01500-08453

    the original # is 01107-08458

I see the 0845 is in both of the numbers, so is it an 8mm diameter with a 45mm length? And if that is the case how do I know the threads pattern?

Yes; you won't the thread pattern in the number unfortunately but here are the common pitches for metric bolts/screws. You can always pick up a thread pitch tool from Harbor Freight or elsewhere that you can measure the existing one with.
