    GS1000 wire wheels...are they alloy?

Seem to recall reading the GS1000 wire wheels used an alloy rim instead of the steel rim my GS750C uses.

    Is this a worthwhile upgrade?

Depends on how you personally judge "worthwhile". My opinion is no.

I seem to recall that some of them were alloy, but not all.

Quite a bit lighter, it can't hurt.

I'll argue with Ed. In my opinion it is worthwhile. They're quite a bit lighter (but not enough to make a noticeable difference with day to day riding) and I prefer the looks. Plus the rims don't rust - they corrode but you can bring back the finish with polishing.
