The easiest way to get for a wider tire for the GS is to buy a wider aftermarket 6.25'' wheel which can be expensive. Or you can use a Busa 6'' rear wheel then you can put up to a 200 rear I like the 190 on it better it lays flatter.
You have to have made or make your own spacers that will fit inside the Busa wheel bearing and over you stock axel. You will need one for all three wheel bearings two outside will be collared spacers and the inside one is made the same length and width of the stock Busa bearing but the inside is the same diameter as your axel. You will need a .25'' off set counter shaft sprocket and you need to switch to a 530 sprocket n chain to clear the frame 17/48 will get you back to stock gearing.
I switched to the Whole Busa frontend and both wheels on my 98 Bandit 1200 it looks really good with that set up.

If you want to go the easy route and just go alittle wider then you could find an older 5.5'' wheel that uses the same size axel as your 82 GS1100 and bolt it on
This is what I did for my 85 GS1150 I used an older ZX1200 rear wheel

stetracer, i like the size of the 2nd bike. i just spin mine to easy. i want a little more traction but not to much that it wants to keep pulling wheelies

Easiest solution however not the widest is to find a later 3.5" 1150 wheel. Depending on what bike you have you will need to modify the brake stay, but as far as spacing and fabrication its your quickest and safest solution.

Contact patch will only increase by a very small margin unless you put a flat car type tire on it when vertical. The point of modern bikes having wider tires is to increase contact patch when leaned over. But, go too wide and the bike will handle slow and heavy, unwilling to transition from side to side. Then again, you do live in Florida so I doubt you have much worry of that..

I would suggest going with a stickier tire rather than having to change swingarms. It won't last as long, but it will hook better.
