It uses a twin-piston caliper, not sure about larger disks.

I think we loosely talked about this previously.. You can put a CBR rotor & twinpot on that bike. I believe it's a 274mm rotor you have currently isn't it?1980 GS1000G - Sold

Yes, I believe yours uses a 274mm rotor. CBR rotor is 295mm and mates up with a twin pot caliper off a Kawasaki Ninja, EX500 or Concourse using a bracket and hub spacer set.
I have some brackets currently & can steer you towards the right rotor / caliper on Ebay. Then you have to drill the rotor, source a 3rd M10 bolt & nut, at that point it's a straight bolt-on. Use stock Master Cylinder.1980 GS1000G - Sold

Bigger Rotor.
Two piston Caliper
Much longer pad (More swept volume of the braking surface makes a big difference).
