EDIT 1/1/2023 - Yes I have a few sets of brackets/spacers/hub spacers left - Price is $104 shipped Priority in the USA. Most other countries tend to be around $125-$130 shipped 1st class package. Newest brackets also allow the new Ninja EX650 Tokico calipers to be fitted as well as SV650 & DL650. Just some pics of the1978 GS 1000 (since new)

I read that the Brembo F08 calipers could bolt directly on a 1000. The F08 has twin 38mm pistons. Am I misguided? AFAIK the caliper bolt patterns are the same between 79- and 80+The GS toys:

Looking at pictures that F08 looks like it would be too thick too...
I haven't found a good solution for an opposed piston yet. I suspect the only models with enough distance between the fork legs would be the 83+ 750/700 models with the 16" wheel. The GS1150 has opposed pistons & I suspect that it is the same front end. The 1150 Hub is much wider to push the rotors out.
The GK models with the larger diameter legs might also have more distance.. I've not measured one to find out.1980 GS1000G - Sold

On a related note...
The XJ9 legs are 37mm and would fit straight on to the GS. The XJ uses opposed piston calipers.
If I ever bend the front badly enough, I'll look for an XJ front end. I honestly can't say I've had any reservations about the XJ handling and braking.---- Dave
